Must Make Asian Inspired Taco Recipe and Movie Night

Happy first day of Spring!  The weatherman swears that it is going to clear up today and become a sunny afternoon (fingers crossed!).

I have to share/save a recipe that I made for Taco Tuesday this week.  Growing up my family had taco night at least once a week–which is a genius idea because tacos are super easy, fast and inexpensive while being absolutely delicious.  I carry on this tradition to my little family and dubbed it Taco Tuesday.

While Drew prefers Asian cuisine, he puts up with my Mexi taste buds and is alright eating Mexican at least once if not twice a week.  So when I discovered an Asian inspired taco recipe in Better Homes and Garden magazine–I had to try it out.  Best of both worlds right?! YES!

Sesame Garlic Beef Tacos (from Better Homes and Garden, March 2015 edition)

  • Corn tortillas–place in foil for 10 minutes at 350 (we double up on corn tortillas as they have a tendency to break
  • 1 lb ground beef, turkey or chicken (I used half beef and half turkey)
  • 2 Tbsp. sesame oil (my Aunt gave me a delicious bottle for Christmas!)
  • 2 or 3 cloves of garlic
  • 1/2 cup soy sauce
  • 3 Tbsp. brown sugar
  • 3 Tbsp. rice vinegar
  • 1 Tbsp. water
  • crushed red pepper
  • hot sauce
  • bag of cabbage
  • lime and avocado slices

Simply cook the meat and remove. Put the sesame oil and garlic in the meat pan for 1 minute or until brown. Add the remaining ingredients to the pan (up to the hot sauce). Allow the ingredients to boil, reduce to a simmer for about 5 minutes.  Place the cooked meat back into the pan and cook until ready to eat.  We topped our tacos with hot sauce, cabbage, lime and avocado.  This is a make again meal for sure!

Asian Tacos

After a day of getting CPR/AED certified and Girls on the Run, I was ready for some relaxation time.  Drew was out of town on business so it was a girls night in for Scout and me.  I rented The Best of Me–a Nicholas Sparks book based movie, and sat down for a quiet evening.  I don’t know why I do it to myself–I love Nicholas Sparks books and movies (admittedly, I have read and watched every single one!) but they are without fail tear jerkers.  And the books/movies are not just simply tear jerkers–they go beyond that to the point that I am crying for basically half of the movie and wake up in the morning with red puffy eyes!  But I am a sucker for them, so I guess I shouldn’t complain!
