• Must Make Asian Inspired Taco Recipe and Movie Night

Happy first day of Spring!  The weatherman swears that it is going to clear up today and become a sunny afternoon (fingers crossed!). I have to share/save a recipe that I made for Taco Tuesday this week.  Growing up my family had taco night at least once a week–which is a genius idea because tacos are super easy, fast and inexpensive while being absolutely delicious.  I carry on this tradition to my little family and dubbed it Taco Tuesday. While Drew prefers Asian cuisine, he puts up with my Mexi taste buds and is alright eating Mexican at least once if not twice a week.  So when I discovered an…

  • Cottage Cheese Oatmeal Pancakes (with Banana)

Good morning! Recently, I have become obsessed with pancakes!  It all started when I gave up bread (aka semi gluten free) for lent– and I became a carb craving girl!  So in order to tame my cravings I have done a lot of experimenting with alternatives for bread based pancakes–subsequently, welcome oatmeal cottage cheese pancakes. I found a ton of different recipes online using cottage cheese and oatmeal in place of traditional flour.  They all had similar ingredients, but took a different approach–so I experimented with a few of them and created a mixed up version of what I would like to call a hybrid banana bread pancake. This recipe combines…

  • Greenville Dog Park and Date Night

Good morning! This week has flown by–I cannot believe it is almost the weekend :).  I am embarrassed to admit that I have lived in Greenville for almost two years (coming up in May) and I still have not explored or taken advantage of all the wonderful things the city has to offer.  A couple months ago, Drew told me about a brand new dog park on the outskirts of Mauldin (a town just south of Greenville).  I was not familiar with the location and with it being a 15-20 minute drive, I have not ventured there.  As we are getting a new roof put on our house this week,…

  • Amelia Island and Fernandina Beach Recap

I had an awesome long weekend traveling to Fernandina Beach, Florida.  My mom has been looking at moving to the Amelia Island area for sometime now and I decided to take a trip with her to scope out her potential new home.  My cousin, Kelsey, and two of my mom’s girlfriends joined along.  It was a fun group of ladies and we all really enjoyed our stay on the island. Fernandina Beach is such a cool town.  It has small town charm, amazing restaurants, beautiful views, lots of sidewalks (a runner’s dream), extremely friendly people and is really a hidden gem on the Florida Georgia line.  I seriously cannot believe that such…

  • January Beach Weekend

My wonderful husband turned the big 28 this past week.  Drew has a ton on his plate between school and work, so I wanted to make sure that even though he had work and class on his birthday–that he would still feel special on his day!  I fixed his requested meal (which we ate super late) and then opened his presents.  I bought him a Bose Soundlink III–it is a small but powerful sound system.  He has been wanting a sound system that we can take to the beach and on the boat–it does it all and is bluetooth powered! The next night we stopped at his parents’ house to…

  • Good Bye 2014, Hello 2015

Good morning!  I cannot believe that it is already 2015–it is really making me start to feel old.  Can you believe that 2000 was 15 years ago?!?  That was the new years that everyone thought that the world was going to go black because all the computers were going to shut down aka “y2k”—and now we are dealing with iPhones, iPads, the cloud, etc. and think that all the y2k business was ridiculous! Hindsight is 20/20. I had a great end of 2014 and great beginning of 2015–it is going to be hard to beat!  I visited with my family up in Maryland where I got to spend quality time…

  • Happy Holidays–Let the Season Begin!

I am soo happy that the holiday season has started!  It is the happiest time of the year.  After talking with various family members and friends–we really wanted to cut down a Christmas tree.  It was a family tradition that my mom and sister continue to this day–and even though I am miles away, I wanted to join in the tradition.  Since we live in South Carolina, I was pretty skeptical that we could find a place that wasn’t hours away to cut down a tree. After researching cut your own Christmas Tree places in South Carolina–I was surprised to find a place only a few miles away! Drew and…

  • New Domain Name!

Welcome to the new One Hungry Runner…can’t wait for the next chapter to begin! I am so happy to get back in the swing of things and introduce my new website.  It has been a while since I have blogged and it is crazy how much I have missed it! But there is totally a reason why…life has been insanely busy. For a quick recap…Drew and I packed our things and moved from Charleston to Greenville, South Carolina, we moved into our first house, I started my career as a practicing attorney, I planned a wedding, planned my sister’s bachelorette party and bridal shower, attended showers, my sister got married,…
